Diabetic exchange diet helps person with diabetes to select food in appropriate quantities. It helps to ensure consistent intake of carbohydrate, protein and fat from day to day. This is vital for person with diabetes to control their blood sugar level.
Diabetic exchange diet, divided food into six groups mainly :
starch or bread
meat and meat substitute
vegetables
fruit
milk
fat.
Once foods have been categorized into a food list they are given a serving size. Each serving has a similar amount of carbohydrate, protein and fat thus the calories will also be the same. Foods can be "exchanged" with others in the same group while still meeting the desired overall nutrition requirements.

Diabetic exchange diet can be applied to almost any eating situation and make it easier to follow a prescribed diet. For example, if a nutrition plan calls for one starch exchange a person could choose ˝ cup of cooked pasta, OR one slice of bread, OR a small (3 oz.) baked potato.
