STRAWBERRY TROPICAL SHERBET

Strawberry Tropical Sherbet  (10 servings) 

  • 2 cups fresh strawberries, halved,

  • 2 cups (about 3 medium) ripe bananas, sliced

  • 1/4 cup sugar

  • 1 (6-ounce) can frozen pineapple juice concentrate, thawed and undiluted

  • 1/4 tsp almond extract

  • 1/2 cup plain low-fat yogurt

  • Fresh mint leaves for garnish

Frozen Berry Yogurt  Preparation Method

Place strawberries, bananas, sugar, pineapple juice concentrate, and almond extract in a food processor or electric blender; process until smooth. Transfer mixture to a medium bowl; add yogurt, stirring well.

Pour mixture into freezer container of a 1-gallon ice cream freezer (hand turned or electric). Follow manufacturer's instructions to freeze the mixture.
