Diabetic Recipe - Foiled Fish Fillet (4 servings)
Ingredients
1 1/3 pounds red snapper fillets
4 pieces ginger root (small) peeled, fresh
4 teaspoons soy sauce
4 green onions, chopped, or 4 shallots minced
Preparation Method1. Preheat oven to 400ºF.
2. Cut or divide fish into 4 equal portions. Place each on a square of heavy-duty aluminum foil. Top each with a slice of ginger, 1 teaspoon soy sauce, and 1 shallot or green onion.
3. Seal foil like an envelope. Bake for 10-12 minutes.Food Exchange
