Diabetic Recipe - Peach Yogurt (2 servings)
2/3 cup peaches, fresh, pared and diced, or canned peaches in juice, drained
1 teaspoon lemon juice, fresh
2 packets artificial sweetener (Equal)
1/4 teaspoon mace or nutmeg, ground
1 cup plain yogurt, low-fat*
1. Slightly mash diced peaches with lemon juice, sweetener, and mace or nutmeg.
2. Stir in yogurt; blend well.
3. Chill in a covered container several hours or overnight.
Food exchanges per ¾-cup serving: ½ FRUIT, ½ MILK, ½ FAT
*If you use nonfat yogurt, subtract ½ FAT.
