Soy Waffles
These waffles are made with soy flour, thus gave more protein than usual. The batter needs to rest a while before cooking, so these waffles are best serve for a late brunch. Enjoy them with crushed berries and low fat yogurt.
Soy Waffles Ingredients
Non stick cooking spray
1/4 cup soy flour
3/4 cup whole wheat flour
1 teaspoon active dry yeast
1 cup evaporated skim milk
1/2 teaspoon orange zest
Soy Waffles Preparation Method
In a large bowl, mix together the soy flour, whole wheat flour, yeast, milk, and orange zest. Let sit for 11/2 hours.
Prepare a wheat iron by lightly coating it with an oil such as canola and preheat it. Spread a ladle-full of soy waffle better onto the iron and cook until the waffle is done. 3 to 5 minutes, depending on the waffle iron.
