Veggie Spread (4 servings)
This delicious veggie spread is very good on whole grain bagels, complimented by the crunch of green pepper and bit of red onion and chives
Veggie Spread Ingredients
8 ounces cream cheese
4 ounces fat free ricotta cheese
2 tablespoon green pepper, cored, seeded, and finely chopped
2 tablespoons red onion, finely chopped
2 tablespoons chives, chopped.
1 tablespoon freshly squeezed lemon juice
4 whole wheat or multigrain bagels, 3 ounces each, sliced in half
Veggie Spread Preparation Method
In a bowl using a fork, beat together the cream cheese and ricotta. Fold in greed pepper, onion chives and lemon juice.
Place bagel halves, cut side up, on the rack of a toaster oven. Toast at highest setting. When bagels are golden brown, transfer to a serving plate, spread bagel halves with cheese mixture and enjoy.
