Blueberry Muffin (12 muffins)

Ingredients For Blueberry Muffin

  • 1 cup all purpose flour

  • 3/4 cornmeal

  • 2 teaspoons baking powder

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon slat

  • 1 egg, beaten

  • 1 cup reduce-fat sour cream

  • 1/3 cup frozen unsweetened concentrate apple juice, thawed

  • 1 1/2 cups fresh or frozen blueberries

  • 2/3 cups reduced fat whipped cream cheese

  • 2 tablespoons no-sugar-added blueberry fruit spread

Preparation Method For Blueberry Muffin

1. Preheat oven to 400 F.  Spray 12 medium size muffin cups with nonstick cooking spray, or line with paper liner; set aside.

2. To prepare blueberry muffin combine flour, cornmeal baking powder, baking soda and salt in medium bowl.  Add combined egg, sour cream and apple juice concentrate; mix just until dry ingredients are moistened.  Gently stir in blue berries.

3. Spoon batter into prepared muffins cups.  Filling each cup 3/4 full.  Bake 18-20 minutes or until golden brown.  Let blueberry muffin stand in pan or wire rack for 5 minutes.  Remove blueberry muffin from pan and cool slightly further.  Combine cream cheese and fruit spread and in small serving bowl and the delicious blueberry muffins is ready to serve.
